Ingredients:
2 cups whole wheat flour (atta)
1 cup finely chopped fresh spinach (palak)
1/2 finely chopped onion (optional, for extra flavor)
1-2 green chilies, finely chopped (adjust to your spice preference)
1/2 tsp ginger-garlic paste (or finely grated ginger and garlic)
1/2 tsp cumin powder
1/4 tsp turmeric powder
Salt to taste1 tbsp oil or ghee for dough + more for cooking the parathas

Instructions:
Prepare the Spinach: Wash the spinach thoroughly. Blanch it in hot water for 2-3 minutes, then immediately transfer to ice water to retain its vibrant green color. Squeeze out excess water and finely chop or make a smooth paste. (Alternatively, you can use fresh, finely chopped spinach without blanching).
Combine Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, salt, cumin powder, and turmeric powder.
Add Wet Ingredients & Spices: Add the finely chopped spinach, onion (if using), green chilies, and ginger-garlic paste to the flour mixture.
Knead the Dough: Gradually add water, a little at a time, and knead everything together to form a soft, smooth dough. Add 1 tablespoon of oil or ghee and knead for another minute until the dough is pliable and not sticky.
Rest the Dough: Cover the dough with a damp cloth and let it rest for at least 15-20 minutes. This helps the gluten relax and makes the parathas softer.
Divide the Dough: After resting, knead the dough once more. Divide it into 6-8 equal portions and roll them into smooth balls.
Roll the Parathas: On a lightly floured surface, take one dough ball and roll it out into a thin circle, about 6-7 inches in diameter. You can make them round, triangular, or square as preferred.
Cook the Parathas: Heat a flat griddle (tava or skillet) over medium-high heat. Once hot, place a rolled paratha on it.
Flip and Apply Oil: Cook for about 30 seconds until small bubbles appear. Flip the paratha. Apply a little oil or ghee on the top surface.
Cook Until Golden: Flip again and apply oil or ghee on the other side. Press gently with a spatula, cooking each side until goldenbrown spots appear and the paratha puffs up.
Serve Hot: Remove the cooked paratha from the griddle. Repeat the process with the remaining dough balls.
